Aloha Frappe

A blend of orange and pineapple juices topped with whipped cream and toasted coconut that will remind you of your favorite island vacation.
Ingredients
- 3/4 cup orange juice
- 3/4 cup seltzer water
- 1 1/2 cups unsweetened pineapple juice
- 1/2 cup sugar
- Whipped cream
- 1/2 cup sweetened coconut, toasted

Method
Combine juices, sugar and seltzer water in a blender until smooth. Serve in glasses topped with a dollop of whipped cream and a sprinkle of toasted coconut.
Notes: To toast the coconut, position a rack in the middle of the oven. Preheat the oven to 300 degrees. Spread the coconut on a baking sheet and bake for 10 minutes, stirring once, until the coconut is golden brown. Watch carefully as the coconut can darken quickly toward the end of baking. Cool before serving.
