Apricot Smoothie

This smoothie drink blends canned apricot halves, strawberry yogurt, honey and lemon juice, and is served topped with shredded coconut.
 

Ingredients

  • 1 can (29 ounces) apricot halves
  • 1/2 cup strawberry yogurt
  • 2 tablespoons honey
  • 2 teaspoons lemon juice
  • Shredded coconut

Method

In food processor or blender mix all ingredients (except coconut) until smooth. Pour into glasses and top with coconut. You may chill this for an hour, if you wish.

 

Notes: This is right-on for a summer drink. You can add some rum or even kahlua, for a more adult flavor.
