Aztec Quiche

The Aztec in this breakfast dish comes from the green chiles. What a simple way to spice up brunch.
 

Ingredients

  • 1 1/4 cup grated Monterey Jack cheese
  • 3/4 cup grated cheddar cheese
  • 1 9 inch unbaked pie shell
  • 1 4 oz can diced green chilies
  • 1 cup half n half
  • 3 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp ground cumin

Method

Spread Jack cheese and half of cheddar over bottom of pie shell. Sprinkle green chilies over cheese. Stir together half n half, eggs and seasonings and pour into shell then sprinkle remaining cheese on top. Bake at 350 degrees for 40-50 minutes.
