Blueberry Basil Spritzers
A refereshing combination of bluberries, lime juice and basil--with a splash of carbonated beverages or champagne for added fizz.
Ingredients
- 1/2 cup sugar
- 1/4 cup water (or, if desired, a medium-dry concord wine)
- 2 cups fresh or frozen blueberries
- 1 Tablespoon freshly squeezed lime juice
- 4-5 fresh basil leaves, plus 6-8 springs for garnish
- 2-3 cups club soda, lemon-lime soda, (or champagne, if an alcoholic drink is desired)

Method
In a small saucepan, combine sugar, water or wine, and basil leaves. Bring to a boil and boil until sugar dissolves. Remove basil leaves and cool. In a blender, combine sugar water, blueberries, and lime juice. Puree until smooth. Use a very fine sieve or cheesecloth to strain mixture until very smooth. Divide blueberry puree to fill a glass 1/4 to 1/3 full, among 6-8 glasses evenly. Top each glass with club soda, lemon lime soda, or champagne. Garnish each glass with a sprig of basil.
Notes: Blueberries are so healthy and they go beautifully with fresh basil. This drink has a lovely color and a fresh taste that you won't find in any bottle.
