Breakfast Rice Drink

Uncooked rice is soaked in water overnight, then blended with almonds or pecans, soy milk, and cinnamon before serving in glasses.
 

Ingredients

  • 1 cup uncooked rice
  • 2 cups water
  • 10 roasted almonds or pecan halves
  • 3 cups soy milk
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla
  • 1/2 tsp ground cinnamon

Method

1. Soak rice in the 2 cups water in refrigerator overnight. Place the rice-water mixture, and the almonds or pecans in blender. Blend until smooth on slow speed. When smooth, increase to higher speed for another 30 seconds. 2. Now add the remainder of the ingredients (except the 1/2 tsp cinnamon for topping.) Mix at high speed 1-2 minutes. 3. Pour into four, 8-oz. beverage glasses; sprinkle the reserve cinnamon on top.

 

Notes: For a thicker drink decrease to 2 cups of soymilk.
