Coconut Summer

This summertime drink combines coconut milk, raspberries, lemon juice, ginger and mint in the blender with ice.
 

Ingredients

  • 3 mint sprigs
  • 3/4 cup unsweetened coconut milk
  • 1/2 cup lemon juice
  • 2 cups crushed ice
  • 1/2 cup raspberries
  • 2/3 cup sugar
  • 2 teaspoons ground ginger
  • Mint to garnish (optional)
 
Method

Remove mint leaves from the stem. Place mint, coconut milk, lemon juice, ice, raspberries, sugar and ginger in a blender. Blend until smooth. Garnish with additional mint sprigs, if desired.

 

Notes: Can be served as is or over additional ice.
