Fruity Vanilla Yogurt Frosty

Pineapple plus orange and lime juice give this rich smoothie a bright, light flavor. Very pretty with sugared rims, strawberries and mint.
Ingredients
- 2/3 cup lime juice, chilled and divided
- 2/3 cup vanilla sugar, divided
- 1 cup orange juice, chilled
- 1 8 ounce can crushed pineapple with juice, chilled
- 1/4 cup lemon juice, chilled
- 1 pint vanilla yogurt, slightly softened
- 4 large fresh strawberries
- 4 fresh mint leaves

Spoon 2 tablespoons lime juice in a small shallow plate. Measure out 2 tablespoons of vanilla sugar in another small shallow plate. Dip rims of four 12 ounce stemmed or tall glasses into lime juice then press into sugar so rims are coated with sugar. Place glasses, upright, in freezer to chill while preparing remaining ingredients. In electric blender, combine remaining lime juice, vanilla sugar, orange juice, crushed pineapple and lemon juice. Cover and blend until sugar is dissolved and pineapple is pureed. Pour into a 2 quart pitcher. Add yogurt and beat with a wire whisk until blended. Pour into chilled glasses and garnish with strawberries and fresh mint.
Notes: This is such a delicious smoothie the lime juice gives it that little extra kick. It is great to serve for either brunch or a summer luncheon or just as a cool, refreshing treat on a hot summer day.
