Ginger Lemongrass Cooler

Fresh ginger and lemongrass are simmered in a sugar syrup, and used as the base for these mixed drinks. Just add club soda and fruit skewers.
Ingredients
- 3, 1/2-inch slices of fresh ginger, quartered
- 1 stalk lemongrass, chopped
- 1 cup sugar
- 1 cup water
- 1 liter club soda, chilled
- 6, 12-inch wooden skewers
- 1 15-ounce can pineapple chunks
- 1 small bunch grapes
- 1 firm kiwi, cut into six wedges

Method
In a small saucepan bring the first four ingredients to a low boil over medium-high heat. Stir until sugar is dissolved. Continue to cook at a low boil for 15 minutes. Remove from heat, strain out solids and cool. To serve fill 6, 2-cup glasses with cracked ice. Pour 1 to 2 tablespoons of this ginger syrup over ice. Fill glass with club soda and stir gently. Thread fruit onto skewers, alternating fruits; place in drinks and serve.
Notes: This is a light and fruity drink that quenches thirst, yet is not too sweet.
