Orange juice concentrate and lemonade concentrate are combined with pineapple and white grape juices. Ginger ale is added, and the beverage is served over frozen watermelon and pineapple cubes.
Place a sheet of wax paper on a large cookie sheet. Spread pineapple and watermelon cubes in single layer on wax paper. Freeze for 2-3 hours. Meanwhile, stir together next four ingredients. Place in 1-gallon pitcher or container. Cover and chill. Just before serving, add ginger ale. Stir.
For each serving, place 5-6 frozen pineapple and watermelon cubes in a 12-oz. glass. Pour chilled mixture over cubes to fill glass. Place a cherry on top. Serve immediately.
Notes:
Since watermelons grow in abundance in our area throughout the summer, and now that fresh pineapple cubes are available in the produce aisle, this recipe is a snap. Whether it's a refreshing drink on a hot afternoon, a delicious punch for a bridal or baby shower, or the perfect drink for an outdoor barbecue, this make-ahead cooler is a great addition to any occasion.
**Once frozen, the pineapple and watermelon can be removed to a zipper-seal freezer bag and stored for later use.
