A little rum and coconut makes this healthy, fruit filled smoothie a little more Hawaiian.
Place the coconut milk, pineapple juice, pineapple, papaya, honey, rum extract and frozen yogurt in a blender. Puree until smooth then transfer into 4 glasses, sprinkle tops with the toasted coconut and garnish each with a mint sprig.
Notes:
Smoothies purchased out can be very high in fat, sugar and calories. My version is full of flavor but by using fresh fruit, light unsweetened coconut milk and low fat yogurt makes it a healthy treat.
