Lemonade Milkshake

Canned lemon pie filling is whirled in the blender along with vanilla gelato, lemonade, soy milk, lemon peel, vanilla and seeds from a vanilla bean.

  • Servings: 2 servings


Vanilla Bean Seeds
Lemon Pie Filling, canned
¼ Cup
Vanilla Extract
½ Tsp.
Lemonade, cold
½ Cup
Soy Milk, cold
2 Tbsp
Vanilla Gelato
Lemon Zest, minced
1 Tsp.
Reddi-wip Whipped Cream
Gingersnap Crumbs
2 Tbsp.


1. Split and scrape seeds from vanilla bean. Place seeds in small bowl along with the next four ingredients. Place bowl in the freezer along with two champagne glasses for 1 hour before ready to serve.

2. Remove Bowl from the freezer and pour ingredients into a blender along with the gelato and lemon zest. Blend for 10-15 seconds until smooth and homogenous.

3. Pour smoothie into frosted champagne glasses. Top with aerosol whipped cream, and garnish with the vanilla bean pod and gingersnap cookie crumbs. Serve immediately.

Helpful Tips:

I used the canned lemon pie filling to make this shake even smoother and lemon tasting. You can find the lemon pie filling in the baking sections of most grocery stores. The vanilla bean seeds add a nice sophisticated balance to this shake. They are relatively expensive though, so if you would like to omit it you can and still achieve optimal results. This is a great shake for kinds on a summer night. If you would like a more refined yellow color, you can add a drop of yellow food coloring to the shake before blended. The lemon zest in this shake is very nice. The key here is to make sure the zest is very, very, very finely minced.
