Mango-Apricot Smoothie

Three fruits--mangoes, apricots, and strawberries--are blended until smooth with yogurt, milk and a little orange juice for this refreshing beverage.
 

Ingredients

  • 2 medium mangos (peeled, pitted and coarsely chopped)
  • 4 ripe apricots, pitted and coarsely chopped
  • 1/2 cup ripe strawberries, hulled and coarsely chopped
  • 1 cup plain yogurt
  • 1 cup milk
  • 2 Tablespoons fresh orange juice
  • 1/2 teaspoon vanilla
  • 4 whole strawberries, hulled (for garnish, optional)

Method

Combine chopped mango, apricots, strawberries, yogurt, milk, orange juice and vanilla in the jar of a blender. Process until mixture is smooth. Divide mixture between 4 large margarita glasses. If desired, garnish each glass with a whole strawberry.

 

Notes: Easy and refreshing.
