Pina Colada Smoothie with Myers Rum

This beverage combines soy milk, vanilla ice cream, Coco Lopez cream of coconut, rum, and frozen pineapple pieces in the blender.
 

Ingredients

  • Soy milk, cold - 1 cup
  • Vanilla ice cream - 2 cups
  • Frozen pineapple pieces - 1/2 cup
  • Coco Lopez, chilled - 4 tbsp.
  • Brown sugar - 1 tbsp.
  • Myers rum - 3 tbsp.
  • Vanilla extract - 1/2 tsp.
  • Malibu liquor - 2 tbsp.
  • Shredded coconut, chilled - 5 tbsp.

Method

Place 3 daiquiri glasses in the freezer to chill. Combine first 8 ingredients in a heavy-duty blender and process until smooth. Add 2 tbsp. of the shredded coconut. Blend for a few seconds more. Pour smoothie into the chilled daiquiri glasses. Top with remaining coconut and serve.

 

Notes: Be sure that the coconut and pineapple are very cold before you add them to the smoothie.
