Pineapple Ginger Splash

This beverage heats crushed gingerroot in water to extract its flavor. The mixture is strained and combined with pineapple and lemon juices and sugar. The drink may be served chilled and/or over ice.
 

Ingredients

  • 3 cups water
  • 2 oz gingerroot
  • 5 cups unsweetened pineapple juice
  • Juice of 1 lemon
  • 1/3 cup sugar

Method

Add water to saucepan and bring to a boil. Beat gingerroot with mallet to crush, then place in saucepan. Cover pan, reduce heat and let simmer for 10 minutes. Remove from heat and let stand for five minutes. Combine pineapple juice, lemon juice, and sugar. Strain ginger solution into mixture. Mix well. Serve chilled and/or over ice.

 

Notes: Stir well before serving.
