Pink Pina Colada Punch

This punch gets its color from cherry Jello powder, but other flavors and colors may be used. Pineapple, coconut cream and ginger ale are also in this mixture.
 

Ingredients

  • 1/2 envelope unflavored gelatin
  • 1 1/2 tsp (approx.) cherry Jello powder
  • 1 cup sugar
  • 1 can (20 oz) crushed pineapple
  • 2 cans coconut cream
  • 1/2 of a 46 oz. can pineapple juice
  • 3 cups cold water
  • 1 liter ginger ale, chilled

Method

In a 1-gallon freezer container, combine unflavored gelatin, cherry Jello and sugar. Add 1 cup boiling water and stir to dissolve. In a blender, blend crushed pineapple until smooth. Stir into gelatin/sugar mixture. Stir in coconut cream, pineapple juice, and cold water. Cover and freeze for 24 hours. Remove from freezer 2 hours before the desired serving time. After thawing for 2 hours, break the frozen punch into chunks, blending each in the blender until smooth. Pour the smooth liquid into a punch bowl. Stir in chilled ginger ale immediately before serving. Makes about 1 gallon.

 

Notes: Recipe was created to be served at a baby shower for an expectant mother who would be having a girl. But almost any pastel color of punch can be created by using a variety of colors/flavors/mixtures of Jello powder. This recipe can be easily doubled to make a second gallon of punch which can be kept frozen and used at a later date. This punch is not overly sweet.
