Pumpkin Pie Cheesecake Smoothie

This drink combines canned pumpkin with cream cheese, yogurt, brown sugar, vanilla ice cream, pumpkin pie spice, milk and ice, and blends until smooth.
 

Ingredients

  • 2 pkgs. (3 oz each) cream cheese, softened
  • 1 can (15 oz) solid pack pumpkin, chilled
  • 1 cup (8 oz) vanilla yogurt
  • 1/3 cup packed brown sugar
  • 1-1/2 cups vanilla ice cream
  • 1/4 teaspoon pumpkin pie spice
  • 1-1/2 cups milk
  • 6 ice cubes
  • Whipped cream

Method

In blender or food processor, combine the cream cheese, pumpkin, yogurt, brown sugar, ice cream, spice, milk and ice cubes. Blend on high speed until consistency of a smoothie. Pour into chilled glasses. Top with whipped cream; sprinkle with additional pumpkin pie spice.

 

Notes: You can use evaporated milk instead of whole milk, if desired. Also, you can use cinnamon instead of pumpkin pie spice. We like both!
