Refreshing Mint Julep Smoothie

A unique, creamy smoothie made with yogurt, fresh mint leaves, apples and vanilla--great for an afternoon pick-me-up.
Ingredients
- 3/4 cup sugar
- 3/4 cup water
- 3/4 cup fresh or jar mint leaves
- 1 1/2 cups plain yogurt
- 1 apple, peeled, cored, diced fine
- 2 teaspoons vanilla
- 1 cup crushed ice

Method
In a medium sauce pan over medium heat, combine sugar, water and mint leaves. Bring to a boil, reduce heat and cook for 5 minutes. Remove from heat, pour into 2 cup glass measuring cup and add 1/4 cup crushed ice. Place in freezer, for 10 minutes to cool. In the meantime peel, core and dice apple into fine pieces. Place in blender and blend on puree cycle and then on low blend. Add yogurt and mix at low speed, then medium for 1 minute. Add vanilla and mix on medium speed a few seconds. Remove water, sugar and mint mixture from freezer. Strain through a sieve and discard mint leaves. Add sugar, water and mint juice to blender and mix on low speed for 30 seconds. Add remaining crushed ice and blend on high for 30 seconds. Add more crushed ice as desired. Serve in parfait glasses.
Notes: The combination of mint with the apple is superb. You can make a double batch of water, sugar and mint mixture and save in refrigerator for up to two weeks.
