Rhode Island Coffee Cabinet


½ cup Cold Whole or Low Fat Milk, 4 oz
¼ cup Coffee Syrup, about 2 oz
8 Medium Scoops Coffee Ice Cream, about 1 quart or 24 oz, softened until just melty at the edges


Put the milk, syrup and ice cream in blender. Pulse several times to begin breaking up the ice cram. With blender off, use a flexible spatula to mash mixture down onto blender blades. Continue pulsing, stopping and mashing until mixture is well blended, thick and moves easily in blender jar, about 30 to 90 seconds. Pour into a chilled glass or glasses and serve. Makes about 3 1/2 cups or 28 oz.

A coffee cabinet just isn't a coffee cabinet without coffee syrup. Your cabinet will have a slightly stronger flavor if you use Eclipse or Coffee Time syrup as opposed to Autocrat. Autocrat, however, should win a design award for its elegant packaging and labeling.
