Singapore Summer Cocktail

This non-alcoholic drink combines chilled tomato juice in the blender with lime juice, mango, fresh ginger, and crushed red pepper.
Ingredients
- 1 (46 ounce) can tomato juice, chilled
- 1 large mango, peeled and cut up
- 1/4 cup lime juice
- 1 tsp minced gingerroot
- 1/4 tsp crushed red pepper
- Garnish: grated coconut and lime slices

Method
In a blender container combine half of the tomato juice, and all of the mango, lime juice, gingerroot and red pepper. Blend till smooth. Pour through a fine strainer into a large pitcher. Stir in the rest of the tomato juice. Serve with a sprinkling of coconut and a lime slice on the rim of each glass.
Notes: Easily doubles for a larger crowd. Make ahead and chill till serving time. A great starter to an Asian-themed menu.
