Sparkling Melon Cooler

This refreshing alcoholic beverage uses orange syrup to sweeten a mixture of pureed melon, ginger & peppercorns. Champagne adds the sparkle.
Ingredients
- For the orange simple syrup:
- 1/2 cup water
- 1/2 cup sugar
- 1 orange, zested and sliced thinly
- For the melon cooler:
- 1 large cantaloupe or honeydew melon
- 3/4 cup orange simple syrup
- 1 tablespoon pink peppercorns
- 2 tsp grated fresh ginger
- 4 cups Champagne, chilled
- 6-8 sprigs of fresh lemon balm or mint (optional garnish)

Prepare the orange simple syrup: Combine water, sugar, and orange zest and slices in a small saucepan. Bring to a simmer over medium heat; stir until sugar is dissolved and then remove from heat. Let cool to room temperature, then strain to remove the orange segments and zest. Syrup can be made up to 1 week in advance. Prepare the melon cooler: Cut each melon in half and scrape out the seeds. Chop the remaining melon into small chunks and place in a blender or food processor. Puree the melon with 3/4 cup simple syrup, pink peppercorns and ginger until smooth. Pour the puree into a pitcher. Cover and chill in the refrigerator at least 2 hours to blend flavors. To serve, stir in the Champagne. Fill 6-8 glasses (depending on size) with ice and pour the sparkling melon cooler into each glass. Garnish each glass with a sprig of lemon balm or mint.
