Tamarind Turbinado Twister

This exotic non-alcoholic drink combines flavors of basil, citrus, ginger, and tamarind. You may add rum instead of club soda if you'd like.
Ingredients
- 1/2 cup basil leaves
- 1 cup turbinado (raw) sugar
- 2 teaspoons grated lemon zest
- 2 teaspoons grated lime zest
- 4" piece fresh ginger, peeled and sliced
- 1 cup warm water
- 11 oz can sweetened tamarind juice (ethnic food aisle)
- 1 cup lemon juice
- 3/4 cup lime juice
- 2 teaspoons vanilla extract
- 1 liter sparking water, chilled
- 4 thin lime slices, cut in half

Mash basil, sugar, lemon zest, and lime zest with the back of a wooden spoon in a 4-cup glass measuring cup to "bruise" the basil leaves; set aside. Puree ginger and the 1 cup water in a blender. Add ginger puree, tamarind juice, lemon juice, lime juice and vanilla to basil/sugar mixture; stir to dissolve sugar. Strain mixture thru 3 layers of cheesecloth into a 2-quart pitcher and fill pitcher with sparkling water. Serve in glasses over ice, garnished with lime slices.
Notes: This is a really unique drink that has the verdent essence of fresh basil, a spicy kick of ginger, and the tang of tamarind and citrus. With a hint of vanilla, this is a really special party drink. Replace the 1 1/2 cups sparkling water with light rum, if an adult version is desired.
