Watermelon Slush

Pureed watermelon, with lime juice and sugar, is the base for this refreshing non-alcoholic beverage, which gets its sparkle from club soda.
Ingredients
- 8 cups watermelon (peeled, seeded and cut up)
- 1 cup water
- 1/3 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 liter seltzer water or club soda, chilled
- Lime slices

Method
In the jar of a blender combine the watermelon, the water, the sugar and the lime juice. Process until mixture is smooth. (If blender is small in capacity, process in two batches.) Pour through a coarse strainer into a large pitcher. Cover and refrigerate until very cold, about 4 hours. At serving time, add crushed ice to margarita glasses. Stir seltzer into watermelon mixture. Fill glasses with the watermelon mixture. If desired, garnish with fresh lime slices. Serve immediately.
Notes: Wonderful on a hot summer day.
