Watermelon Spritzers with Watermelon Ice Cubes

Watermelon is pureed in the blender with lime juice, sugar and allspice. Part of this mixture is frozen as ice cubes. The cubes are added to the chilled watermelon mixture along with ginger ale.
Ingredients
- Watermelon, chopped 6 cups
- Ice water 2 cups
- Lime juice 1/4 cup
- Superfine sugar 1/2 cup
- Ground allspice 1/2 tsp.
- Ginger ale, chilled 12 oz. can

Method
1. Take out the seeds of the watermelon and combine pulp along with the next 4 ingredients in a blender. Blend for 45 seconds or until well blended. Strain mixture through a fine strainer. Pour 2 cups of the liquid into ice cube tray. Freeze the ice cubes along with 4 tall glasses for 3-4 hours. Chill the remaining mixture. 2. When ready to serve, fill the frosted glasses half-full. Add 3 watermelon ice cubes to each glass and top off with ginger ale, stirring gently to combine. Serve with long straws and a decorative paper cocktail umbrella.
Notes: VARIATIONS: Try substituting cantaloupe or yellow watermelon for the usual red watermelon, then proceed with the recipe.
