Ingredients:
| 1 gallon | Plus 3 Quarts Apple Juice |
| 4 Tbsp | Honey |
| 3 Tbsp | Brown Sugar |
| 1 | Vanilla Bean, split lengthwise 2 times |
| ¼ tsp | Cinnamon |
| ½ tsp | Ground Nutmeg |
| 16 | Strips Orange Zest, 3"es long, 1 ¼"es wide |
| 8 Tbsp | (1 Stick) Butter |
| 10 oz | Mount Gay Eclipse Rum, divided |
Directions:
In a large pot, simmer apple juice until reduced 75 percent. You should have a little less than 2 quarts of reduced apple juice.
Add honey, brown sugar, vanilla bean, cinnamon and nutmeg and continue to simmer.
Strain mixture in cheesecloth to remove particles (optional).
Put 2 strips of orange zest and 1 tablespoon of butter in an 8-ounce glass. Add 1 1/4 ounces rum. Ladle hot apple juice reduction into glass and lightly stir.

If you are short on time, you can use frozen apple juice concentrate.
